
Fancy a simple, healthy dish that doesn’t require much of your time to prepare?
Here is a recipe that has all these characteristics and is also really tasty… these delicious baked vegetables with grilled octopus.
1 tray of cooked octopus from el Rey del Pulpo
2 slices of pumpkin
1 carrot
1 zucchini
1 leek
2 small potatoes
2 cloves of garlic
EVOO (Extra Virgin Olive Oil)
Fresh parsley
Salt
Hot sauce (optional)
Another option for cooking vegetables is to grill them. To do this, cut, wash and dry them well so you can cook them in a frying pan with two tablespoons of extra virgin olive oil over high heat. When the oil is very hot, place them on the grill and sprinkle a little salt and ground black pepper. Do not turn them over until they are well toasted!
You can serve the grilled octopus with other grilled vegetables; such as cauliflower, broccoli, sweet potatoes, green asparagus, mushrooms… And if you want your dish to be a little bit spicy, add a hot sauce to taste.
