PINEAPPLE APPETIZER WITH COOKED OCTOPUS

INGREDIENTS

Ingredients for four people:

1 tray of cooked octopus from el Rey del Pulpo.
1⁄2 natural pineapple
1 lemon

HOW TO PREPARE

  • The first thing to do is to take the octopus out of the fridge in advance, so that it is not so cold and can be served at room temperature. This step is important, since the juice of the octopus being at low temperature turns into gelatin, and this way, the gelatin returns to its liquid state. If you do not have enough time to take it out of the fridge before, you can also wash it under the tap with warm water to remove the gelatin and it will be perfect.
  • The next step is the most important part of this recipe. It is time to cut the ingredients, and you should make sure that both (the octopus and pineapple pieces) are as similar as possible (in size and shape). The best thing to do is to choose the size depending on the skewers you are going to use to plate them. Before cutting, take into account the length of the skewer and how many pieces of each will fit.
  • Once the ingredients are cut, put them in the skewers. To plate it, just alternate a piece of octopus with a piece of pineapple.
  • Finally, season with a bit of extra virgin olive oil mixed with a few drops of lemon juice and sprinkle some salt flakes. Our octopus and pineapple skewer is ready in 3 minutes!
