Octopus and Baby eel and potatoes Timbale

Ingredients

Serves two:

10.5 oz el Rey del Pulpo precooked octopus, sliced
4 oz package imitation baby eels (or imitation crab sliced into thin pieces)
3 cloves garlic, sliced
2 whole medium-sized potatoes, washed, skins on 1 tbs butter  1 splash milk Fresh parsley, minced
Olive oil
Salt

Instructions:

  • Boil the potatoes in salted water until soft (30 min). Drain and peel the potatoes. Add in the butter and mash until they’ve nearly reached your preferred consistency. Pour in the milk, a splash of olive oil, and combine.
  • Brown the garlic in a frying pan. Add in the baby eels and a dash of salt. Sauté a few minutes.
  • Place the octopus on a dish and heat in the microwave on high for 2 minutes.
    Assemble the timbale by topping a potato base with a layer of baby eels and then a layer of octopus.
  • Garnish with a dash of olive oil and a pinch of parsley.
