A DELICIOUS OCTOPUS SEAFOOD cocktail WITH VINAIGRETTE

Ingredients

Ingredients for four people:

A tray of 400g of cooked octopus from el Rey del Pulpo.
1 green pepper
1 red pepper
1 medium onion
2 tomatoes
A few sprigs of parsley or cilantro (optional)
For the dressing:
Olive oil
Lemon or vinegar
Pepper (optional)
Salt

HOW TO PREPARE

  • The first thing to do is to prepare the octopus. If you have bought it cooked and frozen, put it in a bowl with water for about 30 minutes without taking it out of its package. If you have chosen to buy refrigerated octopus, the fastest and most convenient option, take it out of the fridge and cut it as requested in the recipe.
  • Wash the vegetables very well and cut them in brunoise (small squares). You can save the tomato juice to add to the vinaigrette, it will give it a very special flavor.
  • Cut the octopus into cubes or slices of 1 cm. The easiest way to do it is with the help of a knife.
  • Mix all the ingredients in a salad bowl.
  • Dress with oil, vinegar and salt. Sprinkle a little bit of parsley and if you want, a little bit of paprika.
  • As a final step: Place the octopus cocktail in the refrigerator for at least half an hour in order to give it freshness and to enhance the flavor of the ingredients.

For the dressing:

  • You can choose to dress the dish with a drizzle of olive oil, the juice of half a lemon, salt or pepper or make a vinaigrette by mixing all the ingredients in a bowl. Remember, if you add the tomato juice, it will be simply wonderful. You can also add crushed boiled egg yolk.
  • Like many other recipes, the octopus cocktail can be made with different ingredients. You can add all kinds of vegetables and even some fruit. We recommend avocado, cucumber or celery. You can also add other fish or seafood such as mussels, shrimps or prawns.
