ITALIAN OCTOPUS SALAD

Ingredients

Ingredientes para dos personas:

2 precooked fresh or frozen el Rey del Pulpo octopus tentacles (about 10.5 oz)
3 potatoes
Fresh parsley, minced
One lemon
Olive oil
Salt
Black pepper
Lemon zest

INSTRUCTIONS

  • If you are using fresh octopus, you can skip this first stem, but if you are using frozen octopus, first defrost it by submerging the package in a bowl of water for 30 minutes, or until fully defrosted. Remove from the packaging, slice the octopus, and microwave it for two minutes at 700-800 watts when ready to cook.
  • Peel the potatoes and cut them into fairly large chunks. Boil the potatoes in salted water for 15 minutes or until soft. Drain completely. Be sure to dry the potatoes well to ensure the dressing isn’t watered down with potato water.
  • While the potatoes are boiling, wash the lemon, and thinly slice the zest.
  • Lay the potatoes on a serving dish and sprinkle the heated octopus on top.
  • Dress with olive oil, a splash of lemon juice, salt and freshly ground pepper, and garnish with lemon zest and fresh parsley.

A FEW TRICKS TO ENSURING YOUR ITALIAN OCTOPUS SALAD IS DELICIOUS

The secret to this dish is not being shy with the oil. If you add too little, it will come out dry and insipid. Besides, it will give you dish the real Italian touch! Remember that using high-quality ingredients and a great dressing is especially important for recipes with few ingredients.
