Recipe for Stir-Fried Octopus with Noodles

Ingredients

Ingredients for 2 servings:

2 cooked octopus tentacles el Rey del Pulpo

1 squid or 200 g of squid rings

200 g of noodles

6 shrimps

1 spring onion

½ red pepper

Rice vinegar

Soy sauce

Ginger

Extra virgin olive oil

Salt

Cilantro (optional)

METHOD

  • The first thing to do is to get the octopus ready. If you have el Rey del Pulpo precooked frozen octopus, you’ll have to place it in cold water for about 30 minutes to thaw it, without taking it out of its packaging. If you’re using precooked chilled octopus, simply take it out of the refrigerator 5 minutes before and you’re good to go.
  • Then, remove the octopus from its packaging, slice and set aside for later use in the recipe for stir-fried octopus with noodles.
  • You should also get the squid ready. If you’re using squid rings, you can use them as they are. Otherwise, you’ll have to clean and slice the squid.
  • Next, wash and julienne the spring onion and red pepper and stir-fry in a wok with a couple of tablespoons of extra virgin olive oil.
  • Once a few minutes have passed, add the squid rings and continue stir-frying.
  • While that’s cooking, get the noodles ready. To do this, place water to boil in a pot with salt and a splash of oil. Cook the noodles for 4 minutes and rinse them under cold running water. Drain and set aside. You can also follow the instructions on the package to ensure they’re cooked to perfection.
  • Turn your attention back to the stir-fry. It’s time to add the shelled or headless shrimps. Stir-fry with the other vegetables and check that the squid rings are tender and the shrimps cooked through.
  • Add the octopus slices, a bit of grated ginger and a splash of rice vinegar and soy sauce.
  • Mix a bit, add the noodles and stir-fry for a couple of minutes until everything is well combined. Season to taste.
  • Sprinkle some minced cilantro on top before serving the stir-fried octopus with noodles.

 

SOME TIPS AND TRICKS TO COOK THE STIR-FRIED OCTOPUS WITH NOODLES TO PERFECTION

To prepare this recipe, it’s best to use a wok. It’s a cross between a frying pan and a saucepan, with rounded edges that make stirring and shaking everything together so much easier. The wok’s shape has been designed to fry and stir-fry food.

You can add more vegetables to the stir-fried octopus with noodles. Add carrot and zucchini sticks to get a more colorful and healthier dish.

There are different types of noodles available. This recipe calls for noodles, but it will also work really well with soba noodles. These are thin noodles made from buckwheat.
