Black pasta, or black squid ink pasta, always tastes like luxury. While this six-ingredient black pasta with Sautéed Octopus may be simple, it is truly a showstopper. It’s also highly nutritious, as it combines the protein of the octopus, the carbohydrates of the pasta, and the beneficial fatty acids and vitamins of olive oil. BLACK PASTA WITH SAUTÉED OCTOPUS RECIPE

INGREDIENTS

Ingredients for 2 servings:

1 package el Rey del Pulpo
14 oz black squid ink pasta
3 cloves garlic, minced
Fresh basil
Parmesan cheese
Extra virgin olive oil
Fresh ground black pepper
Salt

INSTRUCTIONS

  • First, make the pasta. Fill a pot with water and set it over high heat. When it starts boiling, add a splash of oil, a teaspoon of salt, and then the pasta. Stir and cook for the amount of time indicated on the package or until al dente. Drain. Set it back in the pot and add a generous splash of oil and stir to incorporate. Set aside.
  • Sear the garlic over low-medium heat to infuse the oil without burning the garlic.
  • Add the El Rey del Pulpo precooked octopus and sauté a few minutes.
  • Next, pour in the black pasta, sauté, season with fresh ground pepper and salt to taste.
  • Serve your pasta onto plates and sprinkle (or dump!) grated Parmesan cheese or wedges and a few sprigs of fresh basil.
  • Serve immediately.

 

A FEW TIPS TO PREPARE THE BEST POSSIBLE BLACK PASTA WITH SAUTÉED OCTOPUS

If you like spice, make your own spicy oil by tossing a few dried cayenne peppers in with the garlic to infuse. Remember to remove them before adding the pasta if you don’t want to bite into a whole dried pepper with your pasta!

This dish lends itself to many add-ons so feel free to add in whatever strikes your fancy: shrimp, mushrooms, capers, olives, etc.

If you don’t feel like making a special trip to the store for black squid ink pasta, you can also use whatever shape and type you’ve got in the cabinet. Just be sure to follow the manufacturer’s instructions to cook al dente. However, if you do add black pasta to your list, you won’t be sorry.
