3 medium radishes150 g of basmati rice per person

100 g of edamame

1 mango

1 small cucumber

2 tablespoons of black sesame seeds

3 tablespoons of soy sauce

4 tablespoons of sesame oil

3 tablespoons of rice vinegar

1 teaspoon of brown sugar

METHOD

To prepare basmati rice:

  • Start by cooking the rice. For this recipe, you need the rice to be loose, which is why basmati is a good choice. Place the rice in a strainer and rinse well with cold water.
  • Then, in a pot with a splash of sunflower oil, sauté the rice for 1 minute and add 350 ml of water. Season to taste and leave to cook for 15 minutes on moderate to low heat.
  • Once cooked, spread the rice on a dish to cool it and use it in the octopus poke bowl.

Meanwhile, cook edamame according to the instructions on the package. Once cooked, it will be necessary to shell the beans.

Next, cut the precooked octopus tentacles, cucumber and radishes into slices. Slice the mango into thin strips, and prepare the dressing.

For the sauce, mix the soy sauce, brown sugar, sesame oil and rice vinegar together.

To plate the poke bowl:

  • To serve the poke bowl, place the cooked rice at the bottom of the bowls. Divide the octopus, mango, red radishes, cucumber and edamame over the rice.
  • Dress it with the sauce that you prepared beforehand.
  • And lastly, decorate it with black sesame seeds before serving.
