GRILLED OCTOPUS WITH PEA CREAM RECIPE

INGREDIENTS

Ingredients for two people:

1 tray of XL tentacles from el Rey del Pulpo
½ leek
1 small onion
1 potato
250 g frozen peas
100 g cream
Virgin Olive Oil
Salt and ground black pepper
Black sesame seeds (optional)

HOW TO PREPARE

  • The first thing you have to do is to prepare the pea cream. To do this, chop the onion and leek and sauté for a few minutes. 
  • Then, add the peeled and chopped potato and sauté for a couple of minutes more. 
  • Add the frozen peas, a little salt and cover with water. 
  • Cook for 20 minutes over medium heat.
  • Once the vegetables are cooked, blend everything together with the cream and a little black pepper. Add salt to taste. 
  • Next, cut the octopus tentacles in half (lengthwise cut) and brown over high heat for two minutes on each side in a frying pan or on a grill with a little extra virgin olive oil. 
  • Serve a base of pea cream in a deep dish, place the grilled octopus on top and decorate with a few drops of Virgin Olive Oil and black sesame seeds.

TIPS TO COOK THE BEST GRILLED OCTOPUS

To prepare a good grilled octopus you can use a frying pan or a grill, but if you like to grill or you do it regularly, our recommendation is that you invest in a cast iron grill. It is expensive, but it’s a piece that will last you a lifetime. It retains heat very well, achieving an optimal cooking temper ature.
