The best Costco octopus recipe

Ingredients

For the octopus and zucchini:

2 cooked octopus tentacles (el Rey del Pulpo – Costco purchase option)
1 medium zucchini, sliced into ½-inch rounds
2 tbsp olive oil
1 tsp smoked paprika
½ tsp garlic powder
½ tsp ground cumin
Salt and black pepper, to taste
Juice of ½ lemon

For the roasted garlic sauce:
4 garlic cloves
½ cup sour cream or Greek yogurt
1 tbsp lemon juice
1 tsp Dijon mustard
½ tsp honey (optional)
Salt and black pepper, to taste

Instructions

  • Prepare the Roasted Garlic Sauce: Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for about 20 minutes until soft. Once roasted, peel the garlic and blend it with sour cream (or Greek yogurt), lemon juice, Dijon mustard, and honey until smooth. Season with salt and pepper. Chill in the fridge until ready to serve.
  • Grill the Zucchini: Toss the zucchini slices with olive oil, salt, black pepper, and a pinch of smoked paprika. Heat a grill pan or outdoor grill over medium-high heat and cook the zucchini for 2-3 minutes per side until slightly charred but tender.
  • Cook the Octopus: Pat dry the cooked octopus tentacles. Rub them with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper to coat them evenly. Grill over medium-high heat for 2-3 minutes per side until the outside is crispy and slightly charred. Drizzle with fresh lemon juice before removing from the heat.
  • Assemble and Serve: Arrange the grilled zucchini on a serving plate, place the grilled octopus on top, and drizzle with the roasted garlic sauce. Serve immediately and enjoy!
