PRECOOKED OCTOPUS WITH DELICIOUS SAUCES: AIOLI, BRAVA, HONEY MUSTARD

Ingredients

Ingredients for 4 servings:

2 package of precooked octopus el Rey del Pulpo (400g).
Extra virgin olive oil.
Sea salt or flake salt.

For the homemade aioli sauce:

½ cup of sunflower oil.
½ cup of olive oil.
1 egg.
2 garlic cloves.
Juice of ½ lemon.
A pinch of salt.

For the brava sauce:

50 ml of extra virgin olive oil.
30 g of sweet paprika.
15 g of hot paprika.
15 g of all-purpose flour.
100 ml of chicken broth.

For the honey mustard sauce:

1 ripe avocado.
Juice of ½ lemon.
A pinch of salt.
2 garlic cloves.
A few sprigs of cilantro, minced.
50 ml of wine vinegar.
1 teaspoon of ground cumin.
100 ml of extra virgin olive oil.

Steps

A) PREPARE THE OCTOPUS

  • Remove the el Rey del Pulpo octopus from its packaging, let it come to room temperature, and slice. You can cut it into slices or cook the whole tentacle and slice it afterwards.
  • In a frying pan with a splash of extra virgin olive oil on high heat, grill the octopus until golden brown. Make sure to cook it for a couple of minutes on each side until it gets a nice golden-brown color to it.
  • Serve with some flake salt and the sauces we’ve prepared beforehand.
  • Octopus with aioli sauce is quite simply the perfect combination!

B) STEPS TO MAKE HOMEMADE AIOLI

  • To prepare the sauce for octopus with aioli sauce, the first step will be to place the garlic cloves, the egg, oil, salt and lemon juice in the beaker of the immersion blender.
  • Place the immersion blender at the bottom of the beaker without moving it until you see that the sauce is thickening, which means that it’s beginning to emulsify. Then you can make gentle movements with the immersion blender until the sauce has fully thickened. Set aside in the refrigerator.

C) PREPARE THE BRAVA SAUCE

  • To make this sauce, you only have to add both paprikas in a frying pan with oil on low heat.
  • Mix well, add the flour and cook for a couple of minutes. Add the broth little by little while stirring to prevent any lumps from forming.
  • Leave to cook for about 10 minutes, season to taste, and voilà!

D) METHOD TO MAKE HONEY MUSTARD SAUCE

  • In a pot, start by putting the lemon juice and vinegar on low heat. Once that’s heated up a little, add the honey, mustard and oil.
  • Cook for 10 minutes until the sauce thickens. While cooking, keep stirring to prevent sticking. Season to taste and leave to cool.

SOME TIPS AND TRICKS TO MAKE THE BEST SAUCES

Prepare some lovely grilled octopus.

f you love garlic but you’re sick of having the flavor of it ‘repeat’ all day, here are some tips to avoid this. Remove the green germ or the center of the garlic and pop the garlic cloves in the microwave for 30 seconds to get garlic with a smoother taste that will not ‘repeat’ itself. With this trick, you can eat all the octopus with aioli sauce that you want!

If you’ve ended up with some lumps in your brava sauce, you can blend it using the immersion blender to get a perfectly smooth sauce.
