FRIED RICE WITH OCTOPUS RECIPE

INGREDIENTS

Ingredients for four people:

1 tray of cooked octopus from el Rey del Pulpo
200 g of rice
½ l of water
1 cloves of garlic
4 eggs
2 carrots
1 green onion
Virgin Olive Oil
Salt
Soy sauce

HOW TO PREPARE

  • The first thing you have to do to cook this fried rice with octopus recipe is to cook the rice. To do this, place the rice in a strainer and rinse to remove excess starch. Put a little oil in a pot, when it is hot, add the rice and fry it together with a chopped garlic for 1 minute, stirring constantly.
  • Add half a liter of water, a teaspoon of salt and cook over low heat for 18 minutes with the pot covered. The best thing is to pay attention to the indications of the manufacturer of the rice that you are using, since, for example, the round grain rice needs 18 minutes of cooking and a round basmati rice 13 minutes.
  • Then, we spread it in a baking dish so that it cools down and does not become compacted.
  • Next, we prepare the ingredients for our rice: We cut the octopus into small pieces; we peel and cut the carrots; and we beat the eggs in a bowl with a pinch of salt.
  • In a frying pan with a bit of oil, we make a thin French omelet with the beaten eggs. Then, cut it into strips to incorporate it later to our fried rice and set aside.
  • In a large frying pan add a little olive oil, fry the grated carrot for a few minutes and then add the chopped octopus.
  • Stir-fry for a couple of minutes, add the rice, the chopped omelet and a bit of soy sauce, and stir-fry for two more minutes. 
  • Serve hot with a sprinkle of chopped green onion on top.

SOME TIPS TO COOK THE RICE PERFECTLY

This fried rice with octopus recipe can also be served cold, let the rice cool completely, make the French omelet, sauté the carrot, and add all the ingredients cold over the rice. Stir well. In this cut the octopus and add it without heating it.

You can add more ingredients such as peas, diced cooked ham, prawns… Or dress it with a sweet and sour sauce; if you eat it cold, you can use homemade mayonnaise to give it a different taste.
