SAVORY OCTOPUS AND MUSHROOM FILLED PASTRY TRIANGLES

INGREDIENTS

Ingredientes para cuatro personas:

1 package el Rey del Pulpo precooked half octopus

2 sheets of refrigerated puff pastry

1 large onion

7 oz. mushrooms (approx. 1.5 cups)

1 red bell pepper

Olive oil

1/2 tsp sweet paprika

1 egg (for egg wash)

Salt

INSTRUCTIONS

  • To make these savory octopus and mushroom filled pastry triangles, first take the puff pastry sheets out of the refrigerator to come to room temperature; that will prevent them from breaking when unrolled.
  • Finely dice the onion and pepper. Sauté the onion in a frying pan with a dash of olive oil on low heat.
  • When the onion is almost transparent, add the pepper and stir.
  • Meanwhile, wash and dry the mushrooms well and then dice. Increase the heat a little and add the mushrooms, along with a pinch of salt. Sauté.
  • Chop the El Rey del Pulpo precooked octopus and add to the pan, along with the paprika, and stir to incorporate. Remove from heat and allow to cool before filling the puff pastry.
  • Preheat the oven to 400°F. Cut each sheet of puff pastry into 6 triangles. Place one tablespoon of the octopus and mushroom mixture in the center of each, and then fold to form triangles. Brush the top of each triangle with beaten egg.
  • Bake for 20 minutes, until golden brown.
  • They can be served warm, or made in advance and served at room temperature.
