Ingredients

Ingredients for two people:

1 tray of cooked octopus from el Rey del Pulpo
2 tablespoons of wheat flour
1 egg white
1 teaspoon of baking powder
Salt
Olive oil for frying

HOW TO PREPARE

  • Start by removing the tray of cooked octopus from El Rey del Pulpo from the refrigerator or from the freezer. If you take it out of the freezer, soak it in cold water for 30 minutes without taking it out of the package to defrost it.
  • Then, cut each tentacle into pieces of about 2 centimeters and set aside.
  • Make the mixture to coat the octopus and get the most delicious crunchy octopus you have ever tasted. Beat the egg white until stiff.
  • Then, when the egg white has consistency, add the teaspoon of yeast, the flour and a pinch of salt and continue beating until all the ingredients are integrated and you have a homogeneous mixture. It should not be too liquid, it needs to have a fairly firm texture to get a good batter.
  • Add the octopus in the batter mixture and stir so that all the chunks are well impregnated.
  • In a deep frying pan with olive oil, fry the battered octopus for a few minutes until golden brown on all sides. Add the pieces one by one in hot oil to avoid sticking together. 
  • Remove the browned crispy octopus bites on a plate with absorbent paper to drain the excess oil.
  • To finish, serve immediately without further ado or with a sauce of your choice.

 

SOME TIPS FOR A PERFECT BATTER

Before battering the octopus to prepare the crispy octopus bites, marinate it. Put the cut octopus tentacles in a mixture of lemon juice, vinegar, olive oil and aromatic herbs and leave the mixture for a few hours in the fridge.

You can make crispy octopus by preparing other types of batter; for example, you can make the mixture with beer and flour, or add a little bit of paprika and aromatic herbs. You can also prepare it with different types of flour, with chickpea flour it will give it a special touch and it is more digestive as it does not have gluten. Do not forget to try different breadings!

Fry the octopus pieces in batter in small batches so you can get a crunchy batter without absorbing too much oil.

Sauces to serve with the crispy battered octopus

Enjoy these crispy octopus bites without further ado, or serve them with a sauce.  Soy mayonnaise or a sauce with a spicy touch such as sriracha sauce would be the perfect combination.

To prepare the sriracha sauce we will need: 6 chili peppers, 80 ml of vinegar, 3 cloves of garlic and 1 tablespoon of brown sugar. Beat all the ingredients with a blender, place in a saucepan and let it boil for about 5 minutes. Then, let it cool completely. If you want to soften the spiciness a little, you can add a spoonful of tomato sauce.
