
A surprising dish for its simplicity, flavor and texture. Enjoy these crispy octopus bites!
1 tray of cooked octopus from el Rey del Pulpo
2 tablespoons of wheat flour
1 egg white
1 teaspoon of baking powder
Salt
Olive oil for frying
Before battering the octopus to prepare the crispy octopus bites, marinate it. Put the cut octopus tentacles in a mixture of lemon juice, vinegar, olive oil and aromatic herbs and leave the mixture for a few hours in the fridge.
You can make crispy octopus by preparing other types of batter; for example, you can make the mixture with beer and flour, or add a little bit of paprika and aromatic herbs. You can also prepare it with different types of flour, with chickpea flour it will give it a special touch and it is more digestive as it does not have gluten. Do not forget to try different breadings!
Fry the octopus pieces in batter in small batches so you can get a crunchy batter without absorbing too much oil.
Enjoy these crispy octopus bites without further ado, or serve them with a sauce. Soy mayonnaise or a sauce with a spicy touch such as sriracha sauce would be the perfect combination.
To prepare the sriracha sauce we will need: 6 chili peppers, 80 ml of vinegar, 3 cloves of garlic and 1 tablespoon of brown sugar. Beat all the ingredients with a blender, place in a saucepan and let it boil for about 5 minutes. Then, let it cool completely. If you want to soften the spiciness a little, you can add a spoonful of tomato sauce.
