BAKED VEGETABLES WITH GRILLED OCTOPUS RECIPE

Ingredients

Ingredients for four people:

1 tray of cooked octopus from el Rey del Pulpo
2 slices of pumpkin
1 carrot
1 zucchini
1 leek
2 small potatoes
2 cloves of garlic
EVOO (Extra Virgin Olive Oil)
Fresh parsley
Salt
Hot sauce (optional)

HOW TO PREPARE

  • To prepare this delicious grilled octopus with grilled vegetables, the first thing to do is to prepare the vegetables.
  • Take the vegetables, peel them, wash them and cut them into slices or sticks.
  • Meanwhile, boil the potato slices briefly. Five minutes is more than enough. 
  • On a baking tray with baking paper, place all the vegetables, spread them well so that they do not overlap each other, and sprinkle a little salt, ground black pepper and a little virgin olive oil.
  • Once this step is done, preheat the oven to 200ºC. Next, put the vegetables in and let them cook for approximately 20 minutes. When they are lightly browned, prick them with a fork to make sure they are soft and well cooked.  
  • How to prepare the garlic and parsley oil: in a blender, put extra virgin olive oil, parsley, a peeled garlic and a pinch of salt and blend until you get a green oil without lumps. 
  • To cook the octopus, you will need to put the grill over high heat. Once it is very hot, put the octopus and turn it over and over until it is well browned (about two minutes on each side). For this type of recipe, you can also use the whole tentacle, cut in half, or cut it into large pieces, as you prefer. It is not necessary to add salt.
  • Serve on a plate with a base of grilled vegetables, then add the grilled octopus, and to finish, sprinkle with a little bit of garlic and parsley oil as a sauce. 

TIPS FOR PERFECT ROASTED VEGETABLES

Another option for cooking vegetables is to grill them. To do this, cut, wash and dry them well so you can cook them in a frying pan with two tablespoons of extra virgin olive oil over high heat. When the oil is very hot, place them on the grill and sprinkle a little salt and ground black pepper. Do not turn them over until they are well toasted!

You can serve the grilled octopus with other grilled vegetables; such as cauliflower, broccoli, sweet potatoes, green asparagus, mushrooms… And if you want your dish to be a little bit spicy, add a hot sauce to taste.
