THE FUSION BETWEEN AVANT-GARDE CUISINE AND PRECOOKED OCTOPUS

This recipe is enough for two generous servings. What’s more, it doesn’t take a long time to make, so you’ll be sinking your teeth into it before you even know it.

Ingredients

Ingredients for 4 servings:

el Rey del Pulpo precooked frozen octopus

2 onions

50 g of butter

1 red pepper

2 strips of bacon

2 large potatoes

Bean sprouts for decorating

Salt and pepper

Extra virgin olive oil

Method

  • The first thing to do is to thaw the precooked octopus, which is extremely simple. Take the octopus out of its packaging and place it in water while leaving it inside the bag it comes in. Half an hour will be enough to thaw it completely. Once ready, heating it in the microwave on high for two minutes will be enough to get it ready.
  • To make caramelized onions, julienne the 2 onions. In a frying pan, add a splash of olive oil and 50 grams of butter. Wait until the butter has melted completely and then add the sliced onions. Sauté until the onions begin to soften and leave them to cook on low heat until completely limp and brown, which is a sign that they’re done. Season to taste.
  • Once the onions are ready, it’s time to boil the potatoes. This part is a no-brainer. Boil water in a pot and add the potatoes when it comes to a rolling boil. If they’re large, it will take 20 minutes until they’re done. One way to find out whether they’re done is to pierce them with a knife. If it slides in easily, they’re done.
  • In a frying pan, add a splash of oil and leave on high heat. Meanwhile, slice the bacon into cubes and add them to the frying pan. It won’t take long for the bacon to be ready. In the same frying pan, add the julienned red peppers and sauté until tender.
  • The last step involves plating. First, place the sliced potato, then the tentacles and the caramelized onions with some of the red peppers and bacon. Finish decorating using the bean sprouts.

 

This is an octopus dish that forays into avant-garde cuisine and calls for different processes to make it.
